I'm assuming you're using POV-Ray 3.5.

It really depends on what exactly you want to do. You could use one spline
for location and another for look_at, and possible yet more for angle, sky
and what else you might need. Cubic spline gives smooth movements.

If you want the camera to look forward in the direction it's moving, then
you could have a look at this demo scene...
scenes\animations\splinefollow\splinefollow.pov
...and render with the first person view settings.

If you give more details you might get more specific answers. :)
